Yuck. Gross. Blech. Separating pumpkin seeds from the fleshy insides is squishy and terrible, and if you can Tom Sawyer someone else into doing it, jump on that chance.
If not, and you do it yourself, this part of the recipe is what is the most time consuming. I used the seeds from the .Owl Pumpkin.
Once everything is separated,spread the seeds out on a cookie sheet and bake them at 300 degrees for an hour, to dry them out.
While those are roasting, combine 2 tablespoons of melted butter with 2 tablespoons of granulated sugar, 1/2 teaspoon of salt, and 1/4 teaspoon of cinnamon.
When the seeds are cool enough, toss them in the butter mixture and spread them out on the cookie sheet again. Turn the oven to 350 degrees and bake the seeds for 13 more minutes. Remove and let cool! Then partake in the salty sweet goodness.
